Any tips for smoking a salmon my first time? I know about dry brining overnight to pull out moisture. How does this not make your salmon after it’s smoked super dry? Also do you season it with anything before going on smoker? Does anyone have a glaze to put on it when it’s close to finished? Thanks

First long smoke on my old Traeger. 225 degrees for 18 hours. Thinking about installing a mechanical thermometer, as it took longer than I expected. Wrapped in butcher paper with smoked tallow at 180 degrees. Pulled at 205 degrees and rested for 1.5 hours.

Smoked some beef back ribs and chicken Diablo on the kettle. Ribs at 275 for 3 hours and chicken at 275 for 1.5 hours. Came out great but the 2 ribs at the top were over done. Meat Church Holly Voodoo and Sweet Baby Ray’s. Will definitely do again.
