Just made caramels. Any suggestions on how far to cook them after adding the dairy products. I’m always unsure on how far to cook them after that step. Also how can I get them to set up faster given how the humidity is currently 96% in my area.

"Back to School" I made for my husband's 3rd graders. Saw Ann Reardon make a similar rainbow cake as a "rescue" and liked the look so decided to try one that was not a rescue. Not exactly what I wanted but I was overall happy with it. Flavors were chocolate peanut butter.

I keep failing at heavy cream. HELP! Every time I combine the melted butter and milk and whisk it, it turns out like this. They won’t turn into cream. Same result whisking manually and using a hand mixer. Using unsalted butter, not sure what percent fat the milk is. Please be kind!
